Grilled Vegetable Salad – CPK copycat recipe
This delicious grilled veggie salad is a copycat recipe for the one at California Pizza Kitchen
Ingredients
Vegetable marinade:
Balsamic Vinaigrette:
Salad
Instructions
  1. Cut up the vegetables into bite-size pieces and place in a gallon sized zip-top bag large enough to hold all the vegetables.
  2. Combine ingredients for marinade, and pour over vegetables, marinating for at least 30 minutes. During this time you can make the dressing and prep the lettuce for the salad.
  3. Grill vegetables approximately 10-15 minutes, until done. I like to use grill baskets for this as it makes it super easy. You can also use an indoor grill, such as a george forman.
  4. For the dressing, I just combined all ingredients and used my immersion blender for an easy breezy dressing that was quite tasty if I do say so myself 🙂
  5. To serve, place lettuce on plate or bowl and top with grilled vegetables and any other desired toppings. Drizzle with dressing & enjoy.

If desired you can also serve with grilled shrimp, chicken or steak
