Hey Everyone, I hope you’ve had a great week and are enjoying a wonderful weekend! The recipe I’m sharing today is a new one that I made for the first time this week. The flavor was wonderful and we all enjoyed it!
While the recipe is a marinade for the steak, I used it to make fajitas 🙂 Instead of using the 2 lbs. Meat called for, I only used 1 lb (it calls for flank, but any thinner steak will do, I had carne asada on hand).
In a separate bag I used the other ½ of the marinade for veggies – 1 sliced onion, 2 ½ bell peppers (red & yellow), 1 ½ zucchini. My kiddos aren’t huge fans of cooked peppers, so next time I’ll probably increase the zucchini and decrease the bell peppers – although it was nice to use them for breakfast later in the week!
